Ja, wieder ein Rezept mit Champignons. Aber die sind einfach so unkompliziert, lecker und vielfältig einsetzbar 😀 natürlich kannst du auch andere Pilze verwenden, die gerade in Saison sind. Und gibt es etwas besseres als ein richtiges soul food, das schnell geht und jedem schmeckt? Dieses Risotto fällt definitiv in diese Kategorie. Das Risotto ist herrlich aromatisch und mit dem Parmesan unglaublich cremig. Dazu säuerlich-süße Champignons als Topping, eine unschlagbare Kombi! 

Ingredients for this Risotto (serves 2):

700ml Veggie stock
2 Garlic cloves
1 Onion
10 Sun-dried tomatoes
500g Mushrooms
160g Risotto rice
2tsp Cinnamon
2tsp Cumin
2tbsp Oregano
Chilli
Balsamic vinegar
80-100g Grated parmesan cheese
Salt, Pepper

Gemüse anbraten

2 Garlic cloves · 1 Onion · 10 Sun-dried tomatoes · 250g Mushrooms · Salt · Pepper

First, chop the garlic cloves, onion and dried tomatoes. Heat a pot and fry everything in the oil of the dried tomatoes. In the meantime, chop half of the mushrooms and let them brown as well. Add salt and pepper to taste.

Risotto

160g Rice · 700ml Veggie stock · 2tsp Cinnamon · 2tsp Cumin · 2tbsp Oregano · Chilli

After a few minutes, add the risotto rice and also fry briefly. Then add the vegetable broth and stir well. Add the cinnamon, cumin, oregano and chilli. Let the risotto simmer and keep on stirring.

Balsamico-Champignons

250g Mushrooms · Balsamic vinegar

In the meantime, cut the remaining mushrooms into small cubes and brown them in a pan with some oil. Then cover the bottom of the pan with balsamic vinegar and bring everything to a boil. Stir well until the balsamic vinegar has reduced and the mushrooms are like caramelized.

Cremiges Risotto mit Balsamico-Champignons square

80g Parmesan cheese · Tomatoes · Arugula

If needed, keep adding water to the risotto until the rice is soft. Then stir in the parmesan cheese. Serve the risotto with the balsamic mushrooms, chopped tomatoes and arugula!
