Homemade fries with pineapple jalapeño dip

Lately I've somehow posted a lot of homemade fast food recipes! This one fits into that category perfectly too. Of course still by far healthier than eating out (and you can make larger portions which is good too ;)). I don't think I have to explain why fries are the best food in the world. And just trust me about the dip, the combo is just great and something completely different than you usually see with fries. I love very thin and crispy fries, you can of course make thicker ones if you like. To spice up the dip, I used a blend of herbs called "orange spice". It has cilantro, orange zest, turmeric, cumin and a few more spices. You can simply mix your own, sweet spices go especially well with the pineapple. Don't forget to top the fries with your favorite herbs and spices too!
Ingredients for 1-2 Portions of Fries:
700g Potatoes
3tbsp Flour
Oil
Paprika powder
Pepper
Herbs of your choice, e.g. mint, oregano
Salt
Ingredients for the Dip:
200g Pineapple (fresh or canned)
1-2 Jalapeños
Pepper
Spices like cilantro, orange zest,
turmeric, cumin

700g Potatoes
First, peel the potatoes and cut them into very thin strips. Then soak them in a bowl of water.

200g Pineapple· 1-2 Jalapeños· Pepper · Spices
In the meantime, prepare the dip. Put the pineapple and jalapeños in a blender and puree very finely. Then season with pepper and orange spice and mix well.

3tbsp Flour
Remove the potatoes from the water bath and dry them with a clean kitchen towel. Then add flour and roll the fries so that all sides are covered.

Oil · Pepper · Paprika powder
Preheat the oven to 200°C. Put the fries on a baking tray. Drizzle on some oil, add paprika powder and pepper and mix well. Bake for about 30-35 minutes. Turn the fries once during that time.

Salt · Herbs
Add salt and herbs of choice to the fries straight from the oven while still hot and enjoy with the dip!
