Vegetable Quiche with Goat Cheese
Crispy quiche with homemade dough
Today I'll show you how to make a delicious vegetable quiche. The best thing about this recipe is that you can add any veggies to clear out the fridge and it turns out great. You might want to add a few mushrooms, spring onion, zucchini or spinach: there are no limits! If you've always been afraid of homemade dough, put that fear aside now. The dough is super easy to make and wonderfully crispy. The recipe is for a small but taller quiche. A slightly flatter but larger mold works too.
Ingredients for the dough:
2tbsp Olive oil
1tsp Baking powder
Ingredients for the vegetable quiche:
1 Bell pepper
Some small tomatoes
1 Small eggplant
1tsp Paprika powder
Fresh goat cheese
125g Flour · 1tsp Baking powder · Salt · 2tbsp Olive oil · 2tbsp Water · 125g Curd
Mix the flour with the baking powder. Add salt, olive oil, water and curd. Mix everything well and knead on a surface to form a dough. At first the dough is very crumbly, but after a few minutes of kneading it becomes nice and smooth and is done.
1 Bell Pepper · 1 Onion · 1 Eggplant · Oil
Cut the bell pepper, onion and eggplant into thin strips. Heat a pan with oil and fry the vegetables in it.
2 Eggs · 50g Curd · 1tbsp Parslesy · 1tsp Paprika powder · 1tsp Rosemary · Salt · Pepper · Small tomatoes · 2tbsp Goat cheese
In the meantime, mix the eggs with the curd and season with parsley, paprika powder, rosemary, salt and pepper. Cut the tomatoes into small pieces. Stir in the goat cheese and add the vegetables.
Preheat the oven to 200°C top/bottom heat. Flatten the dough and fit it to the mold. Be careful to make the edges high enough so that the filling does not drip out.
Pour the quiche into the dough and spread a few blobs of goat cheese on top. Bake for about 25 minutes, then let cool briefly and enjoy!
