"Flor de calabaza," or squash blossom, is a popular ingredient in Mexican dishes. I was lucky and found many in our garden and used some of them. Fried, stuffed or cut into small pieces they provide an eye-catcher and bring color to the plate. This is a very simple recipe for squash blossoms stuffed with goat cheese. I used mine for my Quesadilla in addition to beans, caramelized onions, avocado and cheese. The blossoms are also perfect as a topping for a salad. Of course, you can also enjoy them by themselves.
