Stuffed Mushrooms with Cottage Cheese and Nectarines
Perfect refreshing snack for summer
This snack is perfect for hot summer days when you want something savory yet fruity and refreshing. Ready in minutes and adaptable with different spices. A must for any garden party coming up! Apricots or another cream cheese also pair well with these yummy mushrooms.
Ingredients for 6-8 Stuffed Mushrooms:
6-8 Large mushrooms
125g Cottage cheese
1tsp Paprika powder
1 Nectarine · 125g Cottage cheese · 1tsp Rosemary · 1tsp Paprika powder · Salt · Pepper
As a first step, cut the nectarines into small pieces and mix with the cottage cheese. Season with rosemary, paprika powder, salt and pepper and set aside.
6-8 large mushrooms
Remove the stem of the mushrooms and scoop out the inside with a spoon. DonÄt throw it away, you can use it for a pasta sauce.
Preheat the oven to 180°C. Fill the mushrooms with the nectarine-cheese mixture and drizzle with olive oil. Bake for about 15 minutes. The mushrooms will stay juicy, the filling will be slightly crispy on top and refreshing on the inside.
