Fried rice is one of those basics that I always like to come back to. Ideal for using leftovers from the fridge and having a great dish that is ready in no time and can be adapted very easily. My recipe today is quick, simple and incredibly delicious. You could eat it like this every week or even upgrade it with a topping or two and make something completely new! I love adding fried pineapple and anything else I have laying around. From peas to peppers and mushrooms, there are no limits! The most important thing is that the rice is not freshly cooked. Leftover rice from another meal or rice that was cooked the day before is perfect. Using "old" rice is what makes this recipe crunchy and not mushy!

Ingredients for 2 servings of Fried Rice:

350g Rice (cooked and chilled)
2 Eggs
2tbsp Butter
2 Carrots
1 Zucchini
1 Spring onion
2tbsp Soy sauce
2tbsp Mushroom sauce (instead of oyster sauce)
Handful chopped peanuts
Salt, Pepper

First, prepare the scrambled eggs. For this, heat a pan and melt some butter. Beat the eggs with salt and pepper and add them to the pan. Stir so that the egg mixture is cut into smaller pieces and fry briefly. Keep it runnier or firmer according to your preference and set aside.

350g Rice · 1-2tbsp Butter · 2 Carrots· 1 Zucchini · 2tbsp Soy sauce · 2tbsp Mushroom sauce

Then cut the veggies and also sauté them in butter for a few minutes. Add the rice and do not stir at first so that it can crisp up at the bottom. Then mix everything and stir in soy sauce and mushroom sauce. Season to taste with salt and pepper.

Peanuts · 1 Spring onion

Lastly, add the chopped peanuts and chopped green onion. Serve hot and enjoy!
