When I cook and bake, I often try to find healthier alternatives for my favorite snacks: cookies, for example. With Christmas cookies or all the yummy store-bought ones, the first associations are of course delicious, convenient and nice. However, they usually contain a lot of sugar and for the most part aren't healthy. So I started experimenting and came up with this recipe! No butter and little sugar, but many spices and nutritious ingredients. These cookies are a perfect alternative for healthy snacking. If you didn’t know the ingredients, you would never guess that these spelt cookies are vegan, have no extra fat and are good for your body. Give it a try. I am sure you will love them! Ingredients for roughly 15 spelt cookies:
120g spelt flour
50g brown sugar
60g spelt flakes
50g walnuts
1tbsp flaxseeds
100ml (plant)milk
5g baking powder
1tsp cinnamon
1tsp cardamom
1tsp lemon zest
1tsp vanilla sugar
1tsp anise
pinch of salt

1tbsp flaxseeds · 60g spelt flakes
First grind the flaxseeds finely in a blender. Then add the spelt flakes and grind roughly.

120g spelt flour· 50g brown sugar · 50g walnuts · 5g baking powder· 1tsp cinammon / cardamom / lemon zest / vanilla sugar / anise · pinch of salt · 100ml milk
Mix the remaining dry ingredients thoroughly with the flake mixture. Then add the milk and stir to form a dough.

Parchment paper
Prepare a tray with parchment paper. Moisten your hands. Scoop out a spoonful of dough and form your cookie in your hand. Place it on the baking tray, leaving space between the cookies. Bake the cookies for about 20-25 minutes at 180°C. Let them cool and enjoy!
