Quinoa and Spinach Bowl with Goat Cheese Dates
Hot stuffed dates on delicious salad

This bowl is perfect for a quick lunch and also ideal as meal prep! It combines all the good nutrients in the spinach and cucumber with healthy fats from the avocado, a tangy kick from the lemon dressing and sweetness with the warm dates. The quinoa makes it filling and covers everything you could want in a healthy dish!
Ingredients for a Quinoa and Spinach Bowl with Goat Cheese Dates:
40g Quinoa
1tsp Paprika powder
1tsp Apple cider vinegar
6 Dates
40g Goat cheese
1/2 Avocado
Cucumber
1tbsp Sweet mustard
1 Lemon
1tsp Honey
Handful spinach
Olive oil
Salt, Pepper

40g Quinoa · 1tsp Paprika powder · 1tsp Apple cider vinegar · Salt
First, cook the quinoa with salt, paprika powder and apple cider vinegar according to package instructions. Preheat the oven for the dates to 180°C convection.

6 Dates · 40g Goat cheese
Cut the dates and remove the seeds. Fill each date with about a teaspoon of goat cheese. Then bake in the oven for 10-15 minutes.

1/2 Avocado · Cucumber
Cut the avocado and cucumber into small pieces and set aside.

1 Lemon · 1tbsp Mustard · 1tsp Honey · Olive oil · Pepper · Salt
For the dressing, mix lemon juice, honey, olive oil, mustard, salt and pepper.

Handful spinach
Lastly, assemble the bowl. The base is spinach and the cooked quinoa, topped with cucumber, avocado and dates. Enjoy!
