Vegan burger patties with jackfruit and beets

Is there anything better than going out for burgers? That's right, making them yourself and eating as many as you want! After my jackfruit taco recipe, I kept experimenting and came up with this great recipe for vegan burger patties made out of jackfruit and beet. Not only do the patties have a great color and look beautiful. Taste-wise, they can definitely keep up with the classic burgers. Add fresh lettuce (I chose baby spinach), your favorite cheese, onions, tomatoes and delicious sauces and the burger feast can begin. Give it a try!
Be careful when forming the patties, they are a little crumbly. Be sure to turn and roast carefully, after they become much more solid. Get creative with your spices, mainly it's just important to use a few different ones and don't forget the acidic component with lemon or vinegar, which I find essential for the taste of the jackfruit. Ingredients for 4 vegan Burger Patties:
230g jackfruit (canned)
200g beet (cooked)
1tbsp Mint
1tsp Thyme
1tsp Parsley
1tsp Paprika powder
1tsp Cayenne pepper
40g Breadcrumbs (about 2tbsp per patty)
Some vinegar or lemon juice
Oil
Salt, Pepper
Ingredients for the Burgers:
4 Burger Buns
Salad, baby spinach, ...
(Vegan) cheese
Tomatoes
Cucumber, pickles
Sauce
... and so on

230g Jackfruit · 200g Beets · 1tbsp Mint · 1tsp Thyme · 1tbsp Parsley · 1tsp Paprika powder · 1tsp Cayenne pepper · Salt · Pepper · Vinegar
First, cut the jackfruit and chop the beet. Then puree, but there should still be chunks visible. Then season with mint, thyme, parsley, paprika powder, cayenne pepper, pepper and enough salt. Finally, drizzle with vinegar or lemon juice and mix well.

Then form the patties. These should not be too thin, because they are quite crumbly. A little thicker and tightly pressed together works best.

40g Breadcrumbs
Next, carefully roll the vegan burger patties in breadcrumbs or sprinkle a little crumbs on top and lightly press them in.

Oil
Heat some oil in a pan and place the patties in it. Roast for about 3 minutes until the bottom is nice and crispy. Then turn them over and let them crisp up as well.

Lastly, assemble the burger by simply stacking your favorite ingredients and enjoy!
