Today I have another very tasty vegan recipe for you! These tofu nuggets are super easy and taste heavenly. Whether you snack them as they are, add them to a salad or as filling for a wrap: if you weren't convinced by tofu until now, you will definitely change your mind! The right kind of tofu is essential. There's a variety of different types of tofu and they also vary in "firmness". I think softer tofu works, but a very firm one is far easier to bread and fry. The nuggets also end up with better texture.
You can cut the tofu nuggets larger or smaller according to your mood and the type of dish you want to add them to. Sticks are convenient for snacking, cubes work well for bowls. Let's go!
Note: the black soy sauce I used here is made of water, soy sauce and sugar and is really thick. However, you can mix 1 tbsp of regular soy sauce with 1 tbsp of agave syrup instead. With the breadcrumbs, it's hard to say exactly how many grams you'll need. I recommend adding more as you go, so that you don't waste any.
Ingredients for 2 servings of Tofu Nuggets:
400g Firm tofu
2EL Black soy sauce
2tbsp Rice vinegar
4tbsp Plant milk (e.g. soy milk)
Breadcrumbs
Pepper
Frying oil

2tbsp Black soy sauce· 2tbsp Rice vinegar · 4tbsp Plant milk · Pepper · 400g Tofu
In a shallow bowl, mix the soy sauce, rice vinegar, vegetable milk and pepper. Cut the tofu into pieces of about the same size, add to the sauce in batches and let marinate briefly.

Breadcrumbs
Prepare the breadcrumbs on a plate. Roll the moistened tofu pieces one by one in the breadcrumbs so that they are completely covered. Then set aside and repeat with all pieces.

Mixed Sauce · Breadcrumbs
When all the tofu nuggets are breaded, carefully dip them into the sauce again (just briefly, so the first layer doesn't come off) and roll them in breadcrumbs again.

Oil
Heat a pan and cover the bottom with oil for frying. When the oil is also very hot, add the tofu pieces in portions and fry until crispy. The oil must be really hot so that the pieces do not absorb the oil, but are actually fried. Be careful here not to fill up the pan too much. This way each nugget will be crispy. If necessary, add oil in between and at the end, dab the nuggets so that excess oil is absorbed. Serve as you like and enjoy!
