Sushirritos
Easily make this delicious fusion food at home

A Sushirrito is one of those fusion dishes that sound crazy at first, but actually isn't that strange. It's basically a large sushi roll eaten like a burrito. Something different, fun, definitely less work than individual small Sushi and tastes great! As always with recipes like this one, each part can be adjusted to your liking. Any combination of cream cheese, vegetables, (vegan) fish, nuts, herbs and sauces tastes wonderful. Also, for example, fried onions or wasabi give that extra something. For this recipe I chose a vegan salmon, which can only be used raw and is therefore perfect for Sushi. But also marinated or fried tofu (like my Tofu Nuggets), are ideal for this dish. Give it a try!
Ingredients for 2 Sushirritos:
2 Nori sheets
150g Sushi rice
1/2 Avocado
Cucumber
60g (Vegan) salmon
Some chopped walnuts
2tbsp Cream cheese
Fresh herbs (e.g. mint)
Spicy or sweet-sour sauce
Rice vinegar
1tsp Sugar
Salt
Served with: soy sauce, wasabi, pickled ginger

150g Sushi rice · 1tsp Sugar · Salt · Rice vinegar
First, wash the rice and cook according to package instructions. Mix sugar and salt into the cooking water. When the rice is done, let it cool slightly and then season with rice vinegar.

2 Nori sheets · 1/2 Avocado · Cucumber · 60g Salmon · Walnuts · 2tbsp Cream cheese · Herbs · Sauce
Place the nori sheet on the work surface and spread the rice evenly on about 2/3 of the sheet. Then add your other ingredients on top of the rice. For example start by spreading the cream cheese, then add salmon, avocado and cucumber cut into strips and finish with nuts, herbs and your sauces.

Soy sauce · Wasabi · Ginger
Once the sushirrito is filled, carefully lift the bottom edge and form a roll. With wet hands, "stick" the excess nori sheet to the roll. Finally, cut it into two pieces with a sharp knife and your Sushirrito is done!
