Oven sweet potato
Simple dish with colorful toppings
Oven potatoes always remind me of Christmas markets, punch and winter. But since I'm now looking forward to summer, today's recipe is a fresher version that you can also enjoy in the warmer months. The bright colors alone make any bad mood go away. You'll fall in love at first bite with this combo of different textures, temperatures and flavors. Also ideal for using leftovers and cleaning out the fridge! In my version, I opted for small tomatoes, feta, fried onion, guacamole and a yogurt sauce on top. Occasionally, I also enjoy adding ricotta or salmon. Adapt this simple sweet potato from the oven recipe to your taste!

Ingredients (serves 2):
2 Sweet potatoes
100g Plain yogurt
Handful small tomatoes
2 Sweet potatoes
Preheat the oven to 180°C. Pierce the sweet potatoes with a fork all around and bake them on parchment paper in the oven.
100g Naturjoghurt · Zitronensaft · Frische Minze · Salz · Pepper
Next, prepare the yogurt sauce. For this, season natural yogurt with lemon juice, finely chopped mint, salt and pepper and mix well.
1 Onion · Coconut oil
Peel the onion and cut into strips. Heat coconut oil in a pan and brown the onions until they caramelize slightly.
150g Feta · Small tomatoes
Dice the feta and tomatoes and set aside.
After about 30-40 minutes, remove the sweet potatoes from the oven and slice lengthwise. Then fill and enjoy!
