When you need to get food on the table asap, most of us often go for the basics - for example pasta with pesto. This recipe for red pesto is almost as easy as grabbing it from the store. With just a few ingredients you can make a wonderful base for pasta, but also for risotto and other dishes. Give it a try! And if you still need more pesto inspo, check out my Avocado Pesto.
Ingredients for 2 servings of Red Pesto:
30g Pickled peppers 30g Sun-dried tomatoes 25g Parmesan cheese 1 Onion 2 Garlic cloves 15g Walnuts Some lemon juice Some lemon zest 2tbsp Basil Pepper
For this red pesto, simply blend all ingredients in a blender to the desired consistency.
Pasta · Pasta water
If you're making pasta, cook it according to package directions until almost al dente. Keep some of the pasta water. Warm up the pesto, add the pasta water and let the pasta finish perfectly.
Capers · Black olives
Serve with capers and black olives.
