10 Minute Coconut-Mango Curry

Sometimes you come home and want nothing more than a delicious meal already waiting at the table. With this dish you can come pretty close to making that wish come true, because it's ready in just a few minutes! My super quick curry is deliciously creamy, sweet and perfect for any season. Star of the dish is the mango, a ripe and sweet one works best! Rice is the perfect side dish for this curry, as it conveniently takes the same time to cook. But also some kind of bread is a great addition. An amazing meal for any day you want something quick and easy that still tastes like you spend a lot of time cooking it.
Ingredients for 2 servings of Coconut-Mango Curry:
2 Garlic cloves
1-2tsp Cumin, Curry, Turmeric
Some Chilli
450g Drained chickpeas
500ml Coconut milk
1 Mango
2tbsp Cilantro
2tsp Apple cider vinegar
Salt, Pepper
Oil
Optional: Coconut flakes

2 Garlic cloves · 1tsp Cumin, Curry, Turmeric · Chilli · 450g Chickpeas · Oil
Heat some oil in a pan and fry the finely chopped garlic. Then heat the cumin, curry, turmeric and chili in the oil so that the flavors develop. Then add the drained chickpeas and fry briefly.

500ml Coconut milk · 1 Mango · 2tbsp Cilantro · 2tsp Apple cider vinegar · Salt, Pepper
Next, stir in the coconut milk, apple cider vinegar and some water. Cut the mango into small pieces and add to the curry. Set aside a few pieces as decoration. Season with cilantro, salt and pepper to taste. Bring to a boil and simmer for a few minutes. Serve with coconut flakes.
