Crispy Potato Cubes with Mediterranean Salad and Egg

The crispy potato cubes with the refreshing yogurt sauce make a perfect match. The mediterranean salad provides vitamins and the fried egg some extra protein. Ingredients (serves 2):
3 Large tomatoes
1 Red pepper
150g Plain yogurt
Bring a pot of water to boil. Peel the potatoes and cut them into small cubes. Then cook for about 15 minutes.
2 Tomatoes · 1 Pepper· 1/2 Cucumber · Cilantro · 1 Lemon · Olive oil · Salt · Pepper
In the meantime, cut the tomatoes, pepper, cucumber and part of the cilantro into small pieces and place them in a bowl. Drizzle with lemon juice and olive oil. Season with salt and pepper and mix well.
Butter · Salt · Pepper · Cilantro
Melt a piece of butter in a pan and fry the cooked potato cubes until crispy. Towards the end add salt, pepper and chopped cilantro.
150g Yogurt · Paprika powder · Salt · Pepper · Cilantro
To make the yogurt sauce, season the yogurt with paprika powder, salt, pepper and cilantro. Mix well and add a little lemon juice to taste.
Butter · 2 Eggs
Put the finished potatoes aside and melt some more butter in the pan. Add the eggs and let them fry. Enjoy!
