Salt and Vinegar Potato Slices with Mint Dip

Anything that has salt & vinegar flavor immediately becomes a favorite snack candidate for me! As a vinegar lover, the mix of sour and salty is just delightful. These potato slices with a refreshing dip of skyr and mint fit this description perfectly. Crispy, tangy and perfect for snacking! Yet really easy and quick to make. Of course, also other dips go really well with the potato slices. How about dipping them in Wild Garlic Hummus or a Mexican Dip?
Ingredients for 1 serving of Potato Slices::
450g Potatoes
2tsp Salt
1tsp Paprika powder
2tbsp Grated parmesan cheese
3tbsp Oil
2tbsp Vinegar
120g Skyr
Fresh Mint
1/2 Lemon
Pepper

450g Potatoes · 3tbsp Oil· 2tbsp Vinegar · 1tsp Paprika powder · 2tbsp Parmesan · 1tsp Salt
Preheat the oven to 200° convection. First, wash the potatoes well and dry them. Then cut them into thin slices (but not too thin, otherwise they will be more like chips). Mix them in a bowl with oil, vinegar, paprika powder, parmesan cheese and salt.

Then place the potato slices on a baking tray with baking paper and bake in the oven for about 25-30 minutes until crispy. Then season again lightly with salt and a little vinegar and mix through.

Mint · 120g Skyr · 1/2 Lemon · Salt · Pepper
In the meantime, mix the dip. To do this, simply chop the mint and mix with the skyr. Add the juice of half a lemon, salt and pepper. Enjoy right away!
